Simple Roasted Baby Potatoes and Rainbow Carrots are delicious and could not be any easier to toss together. The seasonings all have the same measurement so you get a perfect veggie dish every time.

This has been a very hectic two weeks. We had our very limited pandemic Thanksgiving dinner last week, Mr. Tonio’s birthday is just a few days away and I’m trying to organize a socially distanced Christmas party for Aidan and his three amigos to just do a little bit of gift exchanging and socializing. This has obviously been a difficult time for everyone and with my teen being home and really not seeing anybody besides his boomer parents and his little baby siblings, I don’t want him to feel disconnected from his besties. Yes, he thinks I’m a boomer at 32 so it gives me chills to imagine what the babies will think of my advanced age when they’re 15 (haha).

This time of year is always very stressful/exciting. There’s a tense, electric charge in the air when everyone is preparing for the holiday season. This year it’s a little difficult to get into the spirit of everything. First of all, there’s a pandemic. Second of all, it is very unseasonably warm for Massachusetts. Normally, you would have to sleep in your sweatshirt by this time of year. And snow board to your mailbox. And prepare to run from house to car after bundling your kids up like Ralphie’s Mom in A Christmas Story. We have our tree and the living room decorated. We have our front yard decked out and ready for Santa so hopefully any day now the Christmas spirit will hit me in the face like a hardened day-old snowball.

Until then, I suggest to you that you make these lovely roasted baby potatoes and rainbow carrots. These are extremely flavorful and very quick and simple to prepare. They’re an amazing side dish or just plain delicious on their own. This is a great base recipe for any basic vegetable roasting needs. You can easily substitute any potato or carrot or veggie that your little heart desires. I will leave you with this last passing endorsement, my teen and my nephew saw purple and white carrots and they tasted so amazing that they did not question the questionable colors of the carrots or the questionable size of the baby potatoes. Even the pickiest of eaters will enjoy this veggie side dish!

Simple Roasted Baby Potatoes and Rainbow Carrots

Ingredients
  

  • 2 Pounds Rainbow carrots
  • 2 Pounds Baby potatoes
  • ½ Cup Olive oil
  • 1 Tablespoon Minced garlic
  • 1 Teaspoon Salt
  • ½ Teaspoon Black pepper
  • 1 Teaspoon Garlic powder
  • 1 Teaspoon Dried oregano
  • 1 Teaspoon Dried parsley
  • 1 Teaspoon Seasoned salt

Instructions
 

  • Preheat oven to 385°. Peel the rainbow carrots and cut in half. You will have about 3-inch pieces.
  • Add rainbow carrots, baby potatoes, olive oil, minced garlic, salt, black pepper, garlic powder, dried oregano, dried parsley and seasoned salt to a pan sprayed baking pan. Mix together with your hands to ensure all of the carrots and potatoes are coated completely. Bake for 35 minutes.
