Quick Jalapeño Popper Smothered Chicken Breast

Ingredients
  

  • 1.5 Pounds Boneless, skinless chicken breast
  • 8 Ounces Cream cheese
  • 2 Cups Shredded cheddar cheese Divided
  • 2.5 Tablespoons Sliced pickled jalapeño peppers Chopped
  • 1 Teaspoon Fresh jalapeño Chopped and deseeded
  • 2 Tablespoons Green onion Chopped

Instructions
 

  • Preheat oven to 350°. Line a baking sheet with aluminum foil and pan spray. Lay the chicken breast on the baking sheet and season with salt and pepper.
  • Combine cream cheese, 1 cup of shredded cheddar cheese, pickled jalapeño, fresh jalapeño and green onion in a mixing bowl. Mash ingredients together with a fork. To deseed the jalapeño, cut in half lengthwise and remove the seeds and membranes with a spoon.
  • Spread the cream cheese mixture over the chicken breast. Top with remaining cup of shredded cheddar cheese. Bake for 35 minutes or until the internal temperature reaches 165°F.
