Quick Jalapeño Popper Smothered Chicken Breast
A healthier but equally delicious alternative to this fried side order staple.
Ingredients
- 1.5 Pounds Boneless, skinless chicken breast
- 8 Ounces Cream cheese
- 2 Cups Shredded cheddar cheese Divided
- 2.5 Tablespoons Sliced pickled jalapeño peppers Chopped
- 1 Teaspoon Fresh jalapeño Chopped and deseeded
- 2 Tablespoons Green onion Chopped
Instructions
- Preheat oven to 350°. Line a baking sheet with aluminum foil and pan spray. Lay the chicken breast on the baking sheet and season with salt and pepper.
- Combine cream cheese, 1 cup of shredded cheddar cheese, pickled jalapeño, fresh jalapeño and green onion in a mixing bowl. Mash ingredients together with a fork. To deseed the jalapeño, cut in half lengthwise and remove the seeds and membranes with a spoon.
- Spread the cream cheese mixture over the chicken breast. Top with remaining cup of shredded cheddar cheese. Bake for 35 minutes or until the internal temperature reaches 165°F.
