I have always been a huge fan of fudge. Literally, any kind of fudge will do. It’s always something I look forward to so much when I go on vacation to places that have little shoppes. Fudge has always been one of those luxury desserts. Fudge feels so special when you get to indulge in some. However, fudge is actually pretty difficult to find. It’s definitely not something that’s sold everywhere.
I love myself an extra easy and simple dessert. A sugary dessert that’s nearly effortless to make is one of the greatest things that can happen in my life. I especially love desserts that are super luxurious and come together without leaving you exhausted. I like simple desserts that you don’t have to be a Parisian-trained pastry chef to make happen. My Mom and my Nana both used to make their own perfect homemade fudge. I regret never helping or watching them make their fudge. Being that I’m such a big fudge fan and vacations are very sparse now, I’ve had to learn to make my own. Thanks to the pandemic, inflation and the amount of high energy children that I now travel with, going away for vacation just doesn’t seem like the priority. Tonio was on vacation recently and we’ve just been enjoying a “staycation” and taking care of some long awaited home improvement projects around the property.
And there’s something to be said for desserts that don’t require you to heat up the whole house with the oven. Fudge is an excellent option for winter and summer dessert time. No bake desserts like Reese’s Ice Cream Sandwich Cake are always the easiest and the most convenient to make.
Butterscotch is one of those amazingly warm flavors that I feel like people forget about. It’s an old-school and very classic, smooth flavor. It’s caramel-esque (sure, that’s a word) and has such rich, silky flavor. I had butterscotch pudding a few years ago which totally renewed my childhood love for this golden deliciousness.
Heath Bars add extra special texture to this Wicked Easy Butterscotch Heath Toffee Fudge. Skor bars are very similar (and were my Papa’s favorite). I do prefer Heath Bars slightly. They have a more tasty toffee filling. This recipe is a beautiful recreation of flavors I loved and enjoyed a lot with my Nana and Papa as a kid. I’m very much enjoying this renewed butterscotch obsession. I credit whoever was handing out mini Heath Bars this past Halloween. I stole all of them from my kids’ trick-or-treating haul. #sorrynotsorry
Do I need any special equipment to make this fudge recipe?
Absolutely not! I keep my cabinets stacked with only cookware that serves multiple purposes or that is used very frequently. I’m not into bulky appliances, pans, equipment or tools that take up space and just collect dust 99% of the time.
I like to keep it simple so I don’t even own things sometimes used in the fudge making process. Items such as a double boiler or candy thermometer are not things I use or own. That’s right, this recipe is so easy that you won’t even need a fancy thermometer or something as wild as a double boiler.
I use a makeshift double boiler. The best part of doing this is that I’m sure you have this stuff right at home so need to run out and buy anything new. You’ll need a medium saucepan and a large heat-safe glass bowl. Add about two inches of water into the saucepan and heat to a simmer. You’ll place the large glass bowl on top of the saucepan while the water heats up. You will be throwing together your easy fudge inside of the glass bowl.
Can I make this butterscotch fudge in the microwave instead?
Absolutely! This kind of cheat method works great and saves you some time and stirring. You can add the butter, vanilla extract, butterscotch chips, salt and sweetened condensed milk to a microwave-safe bowl. Microwave for about 2-3 minutes until the butterscotch is fully melted. Microwave 1 minute at a time and stir after each minute. Stir to combine well. Pour the fudge into a lined 8X8 baking pan. Add the Heath English Toffee Bits evenly over the top of the fudge and gently press into the fudge to help them stick better. Refrigerate so that the fudge may set. Overnight is best but you can slice the fudge after about two hours.
What are other options that I can add to the top of this fudge?
I love the Heath Bar that tops this butterscotch fudge. However, you can swap it out for one of the options below. An even better idea is to add additional toppings as well as the Heath English Toffee Bits.

Heath Bar vs. Skor Bar
My Papa was a big fan of the Skor Bar. I lean towards Heath Bar for sure. Essentially, they’re pretty much the same candy bar. The differences are slight so it’s just a matter of what you prefer to top your Butterscotch Fudge recipe with. The major difference between the two is that the Heath Bar is English toffee and the Skor Bar is butter toffee. Both of them have the toffee covered in milk chocolate. If you’re asking me, I think the Heath Bar toffee has a more flavorful and rich toffee than the Skor Bar.
Could I use an electric mixer when mixing the butterscotch fudge?
You surely can! If you are like me and lacking a bit in the upper arm strength department, then an electric mixer may be the solution for you. I stir my fudge. Why? I don’t know. It’s how I learned so it’s just what I’m used to. However, you can definitely use the assistance of your electric mixer to make your life a lot easier. Keep the setting on low. And enjoy not having aching arm muscles the next day. 🙂
What’s the best way to store Wicked Easy Butterscotch Heath Toffee Fudge?
I always store my fudge in the refrigerator in an airtight container. You do not have to. For something like this with candy on the top, I think it helps prevent the candy from melting. In or out of the refrigerator is totally fine though. This fudge will keep in the refrigerator for 2-3 weeks.
My Nana always kept herself a secret stash of fudge in the freezer that she would whip out of thin air. I never saw her making it but she always seemed to have some chilling in the freezer for whenever the mood struck. You can store your fudge in an airtight container or Ziplock freezer bag for up to 3 months.
Instructions
Bring a medium saucepan filled with 2 inches of water to a simmer. Pan spray a heatproof glass bowl and fit snugly on top of the saucepan on the stove. Once the bottom of the bowl has warmed, add butter and vanilla extract. Allow the butter to melt for about a minute.
Add the butterscotch chips and salt. Stir constantly and vigorously until the butterscotch chips are melted. The butterscotch will resemble a big glob and will be hard to stir. At this point, add the sweetened condensed milk and continue to stir constantly until completely mixed and smooth. This will take about 1 minute.
Line an 8×8 pan with parchment paper or aluminum foil. Scoop all of the butterscotch fudge into the prepared pan immediately after the desired texture is reached and spread into one even layer. Add the Heath English Toffee Bits evenly over the top of the fudge and gently press into the fudge to help them stick better. Refrigerate for at least two hours prior to slicing, overnight is best. Store in an airtight container.
