These spicy potato wedges are crispy on the outside, soft on the inside and seasoned to perfection.

Spicy fries or Cajun fries are always a favorite! Potato wedges are a nice and hearty type of fry. They have the perfect combination of a crispy exterior and a soft, fluffy and buttery interior.

This recipe is on the healthier side so our potato wedges are baked. And they are baked in extra virgin olive oil so they’re healthy(ish). Well, as healthy as any type of potato can be. These wedges are always delicious on the side of my Korean BBQ Burgers with Gochujang Slaw. Wedges are so versatile that you can literally serve them on the side of anything. Spicy potato wedges are never a bad idea.

We will be making our own seasoning blend for these wedges. This is literally the easiest recipe to toss together. I love when everything in the recipe is the exact same measurement. We’ll be mixing 11 different seasonings and they are all 1 teaspoon of each.

What kind of potato should I use for these spicy wedges?

Russet potatoes offer the tastiest fries. This is always my potato of choice. Yukon gold and red potatoes would also make delicious alternatives. The spicy potato wedge seasoning blend would also be scrumptious on some baked baby potatoes.

Do I use the entire spice blend on the potato wedges?

No, you will use about 2 1/2 tablespoons to spice up the wedges. The seasoning blend makes enough that you can put some away for the next time you make wedges or spicy fries. Store in a dry place in an airtight container.

Instructions:

Preheat oven to 400°. Rinse and dry russet potatoes. Add extra virgin olive oil to a pan sprayed baking pan. To cut the potatoes in wedges, cut the potato in half length-wise. Lay the flat, sliced part of the potato flat on the cutting board and cut in half length-wise again. Cut each half in half again. Each potato should yield 8 wedges. Add the potato wedges to the baking pan.

Add the remaining ingredients to a bowl. Stir all of the dry seasonings until mixed completely. Add 2½ tablespoons of the seasoning to coat the potatoes. Using clean hands, mix the seasonings, olive oil and potato wedges thoroughly until the potatoes are all coated completely. Store the remaining seasoning in an air tight container for future use.
