When you think of an easy slow cooker weeknight dinner, this is the recipe that is going to come to mind. This recipe has under 10 minutes worth of prep time, does not have many ingredients and comes together in just two simple steps.


The weeknights get busy and very hectic. Quickly. As is the case for most people. The days seem to drag on and then the nights when you’re home with your family seem to move in fast forward. Everyone is running around crazed. Trying to come together as a family can be chaotic. Never mind making dinner in between driving your teen around and finding a new episode of Blippi and changing diapers and finding something your husband is looking for (that’s always directly in front of his face).


These are the weeknights that recipes like this are designed for. There is nothing more convenient than spending under 10 minutes in the morning throwing together the ingredients for this Quick Crockpot Curry Chicken and Sweet Potato Soup. Why do you use chicken bone broth in this recipe?

Bone broth is one of my favorite ingredients that I’ve added to the pantry and started cooking with. Bone broths have such deep and rich flavors. Unlike regular broths, bone broths are made from bones that have been roasted. These bones are simmered on very low heat for 24-48 hours.


There are reportedly a lot of health benefits to consuming bone broths. A lot of people just drink broth straight up as if drinking a cup of tea or coffee. There may be benefits for your skin, bones and digestive health. Due to the long and slow cooking process, the bones release collagen, calcium, glucosamine and other nutrients.


I love this recipe because it feels good serving something so healthy to my family. Sweet potato, chicken, curry powder and the chicken bone broth make for a delicious and nutritious family dinner that actually comes together quickly and easily.


Instructions

Peel sweet potatoes and cut into 2-inch chunks. Chop garlic and the white part of the green onion. Pan spray the slow cooker pot and add all of the ingredients in the order listed. Cover and cook on high for 6 hours.


Remove the lid and stir for 3 minutes to break apart the sweet potatoes and the chicken prior to serving.

Ingredients
  

  • 2 Large sweet potatoes
  • 2 Pounds boneless skinless chicken breast
  • 5 Cloves garlic
  • 3 Tablespoons fish sauce
  • 2 Tablespoons green onion (white part)
  • 3 Teaspoons curry powder
  • Teaspoons salt
  • 1 Teaspoon black pepper
  • 1 Teaspoon garlic powder
  • 1 Teaspoon dried parsley
  • 1 Teaspoon turmeric powder
  • 32 Ounces chicken bone broth

Instructions
