A very quick and easy dinner for any busy weeknight. This recipe is very fast to prepare and it offers all of the classic goodness you would expect from a good roasted sausage, pepper and onion dish. What makes this dish extra special? It has roasted russet and sweet potatoes as well.

The last few years that I’ve been a stay-at-home parent, I’ve worked part-time a few nights a week. I’ve been slowly cutting back through my last pregnancy and then once the little princess made her arrival. However, my shifts for work begin at 8:00pm. That leaves me a limited amount of time to pick up my teen from his after school job and fight through fussy, needy smaller kiddos to cook.

I need a quick and easy meal on the table for family dinner. It can be challenging to get dinner done so that we have a few minutes to eat together between Anthony getting home and me leaving.


Sheet pan suppers are an answer to the prayers of any family chef that is short on time. Throwing a protein and/or vegetables together with some oil and seasonings always turns out delicious and it’s a huge time saver. Prep time on sheet pan suppers takes only minutes. You chop your veggies and then throw everything together.


This is also a great and easy-to-make meal if you get roped into bringing food to a barbeque or the office pot luck. Sausage is one of my favorite meats to cook. Why you ask? Because I’m lazy and sausage is perfect the way it is (haha). It’s the only meat that I don’t have to season. If you literally just opened a package of hot or sweet Italian sausage and tossed it into the oven, it would come out delicious.

There are tons and tons of fantastic recipes to make with sausage. Some of my favorites are:

Easy Spicy Sausage Slow Cooker Cheesy Tortellini: This is a quick and simple slow cooker meal that offers plenty of short cut and time saving options.

World’s Greatest Holiday Green Bean Casserole with Spinach and Sausage: This is my sister-in-law’s favorite dish. So much so that I only think about her when this dish comes to mind now. It is delicious for holidays or special dinners. It’s a combination of green beans, spinach and sausage. They are all tossed with a creamy garlicky and lemon zest sauce and a parmesan breadcrumb mixture.

Mom’s Famous Holiday Wild Rice and Sausage Stuffing: This is my Mom’s invention and a favorite classic for anybody in my family. I’ve modified it over the years so that it’s easy to make without having to go through the trouble of stuffing it into a turkey that you roast for four plus hours. It can be made on the stovetop as well. The seasoning blend and the white rice and wild rice is accentuated by the salty deliciousness of the sweet Italian sausage.


What can I substitute for pork sausage?

You can definitely substitute the traditional pork Italian sausage in this recipe, if desired. You could use:

-Chicken sausage
-Kielbasa/smoked sausage
-Chorizo
-Veggie sausage
-Tofu sausage
-Turkey sausage
-Garlic or provolone stuffed sausage

Recipe Alternatives:

Low carb is an excellent alternative to try. You can omit the russet potatoes and the sweet potatoes if you’re going for a low carb dinner option.

Sausage, pepper and onion subs are always a crowd pleaser. Prepare the recipe according to the instructions. Skip the russet potatoes and the sweet potatoes. Once cooked, you can stuff your favorite sub rolls with roasted sausage, pepper and onion. Slather the bread with some delicious stone ground mustard or top the sausage, pepper and onion with some marinara sauce.

Sausage, pepper and onion pasta is delicious. If you have leftover roasted sausage and veggies that you prepared with no potatoes, then this is a great way to utilize them. Prepare your favorite jarred spaghetti sauce and add the leftover sausage, pepper and onion. Add any additional seasonings that you normally would to spice up your spaghetti sauce. And you will have a phenomenal twist on your store bought sauce. Roasted sausage, pepper and onion adds a very special flavoring when served over pasta. Serve this pasta topped with grated parmesan and some freshly chopped parsley.

Add-ins are always welcome. The following are all sure to enhance the delicious flavor of this recipe.

-Baby potatoes


Step by Step Instructions:

Preheat oven to 425°F. Add the sweet Italian sausage links to a pan sprayed baking pan. Bake for 25 minutes.

Chop the sweet potatoes/yams, russet potatoes, green peppers and onion into 2-inch chunks or slices.

Pan spray a large baking dish, add the vegetable oil and minced garlic to the bottom. Cover with all of the chopped vegetables. Season with adobo seasoning, salt, black pepper and garlic powder. Stir to combine everything well. Reduce the heat of the oven to 400°F. Bake for 1 hour and 20 minutes.


Once the sweet Italian sausage have baked for their 25 minutes, remove from the oven. It is important to note that the sausage will only be cooked about halfway. Slice the sausage into two inch chunks. Add to the roasting pan of vegetables in the oven and stir to combine. Return to the oven for the remainder of the baking time. Re-stir everything in the roasting pan about every 30 minutes to ensure that everything is roasting evenly.

Ingredients
  

  • 2.75 Pounds sweet Italian sausage links
  • 4 Russet potatoes
  • 2 Large sweet potatoes or yams
  • 2 Green peppers
  • ½ Large yellow onion
  • ¾ Cups vegetable oil
  • 3 Tablespoons minced garlic
  • Teaspoons adobo seasoning
  • Teaspoons salt
  • 1 Teaspoon black pepper
  • 1 Teaspoon garlic powder

Instructions
 

  • Preheat oven to 425°F. Add the sweet Italian sausage links to a pan sprayed baking pan. Bake for 25 minutes.
