Best Banana Bread Muffins Ever
Banana bread has always been one of my favorite things to eat. I would savor every delicious, moist bite slathered in butter. It was something I never thought I would be able to master and it’s actually the first baked good I attempted to make from scratch. It is amazing! Over the years, I have adapted this recipe to include several variations. This is my go-to, classic, comforting banana quick bread recipe. You can also use this batter to make delicious muffins.
Best Banana Bread Muffins Ever
This banana bread is as moist as it is easy to make.
Ingredients
- 2-3 Overripe bananas
- ¼ Teaspoon Salt
- 1 Teaspoon Baking Soda
- ⅓ Cup Butter(Melted)
- ¾ Cup Sugar
- 3 Tablespoons Milk
- 1 Teaspoon Vanilla Extract
- 1 Egg, beaten
- 1½ Cup Flour
Instructions
- Preheat oven to 350°. Melt butter in microwave for 30-60 seconds until melted. In the meantime, mash overripe bananas until well mashed in a large mixing bowl.
- In the bowl of mashed bananas, add salt and baking soda and stir to combine. Mix in melted butter.
- Add sugar, milk, vanilla extract and egg. Stir until combined.
- Add flour and stir to combine. Note: If you would like the batter to be a bit more moist, add an additional tablespoon of milk and stir.
- Pour batter into greased muffin pans. Bake for 20 minutes or until toothpick comes out clean.
Notes
For egg allergies, substitute one egg for 1/4 cup of vegetable oil or 1/4 cup of unsweetened apple sauce.
This batter yields 12-16 muffins.
You may also bake this batter in a 9×5 loaf pan. Bake for 50 minutes or until toothpick comes out clean.
