Asian Inspired Bacon Wrapped Meatloaf With Spicy Brown Sugar Glaze
This mouth-watering meatloaf has the perfect combination of spice and flavor. This ain't your Grandma's meatloaf.
Equipment
- 17" X 12.6" Inch Broiler Pan
Ingredients
- 1 Tablespoon Olive Oil
- 2 Tablespoons Onion, Chopped
- 5 Cloves Garlic, Chopped
- 1¼ Cup Water
- 2 Pounds Ground Beef
- ¾ Tablespoon Salt
- ½ Tablespoon Black Pepper
- ½ Teaspoon Garlic Powder
- ½ Teaspoon Dried Oregano
- ½ Teaspoon Dried Parsley Flakes
- ⅛ Teaspoon Crushed Red Pepper Flakes
- ⅛ Cup Italian Style Bread Crumbs
- ⅛ Cup Grated Parmesan Cheese
- 1 Egg
- 1 Tablespoon Soy Sauce
- 8 Slices Bacon (Not a thick cut)
Spicy Brown Sugar Glaze
- ⅓ Cup Ketchup
- 2 Tablespoons Brown Sugar
- 1 Tablespoon Yellow Mustard
- 1 Tablespoon Rice Wine Vinegar
- ½ Tablespoon Sriracha
Instructions
- Preheat oven to 400°. Heat olive oil in pan on medium heat and add chopped onion and garlic. Saute for about 4 minutes until onion and garlic are translucent. Allow to cool.
- Combine all ingredients for the Spicy Brown Sugar Glaze until mixed well.
- Pan spray both cook surfaces of the broiling pan. Add water to the bottom broiling pan. This step ensures that the pan will not smoke and that the meatloaf will come out moist. Add sauteed onion and garlic, ground beef, salt, black pepper, garlic powder, dried oregano, dried parsley flakes, crushed red pepper flakes, Italian style bread crumbs and grated Parmesan cheese, egg and soy sauce.
- Mix the meatloaf mixture with your hands. Take care to not over mix the meatloaf. If over mixed, the meatloaf can become tough and dry during cooking. Form the meat mixture into a loaf in the bowl and transfer to the broiling pan.
- Use 3-4 tablespoons of the Spicy Brown Sugar Glaze to coat the surface of the meatloaf. Reserve the remainder to glaze before serving.
- Wrap 6 slices of bacon around the loaf. Tuck the ends of the bacon under the meatloaf. Wrap the 2 remaining slices of bacon across the meatloaf lengthwise. Bake the meatloaf at 400° for the first 30 minutes of cooking time. When done, adjust the oven temperature to 385° and continue cooking for an additional 30 minutes.
- Allow meatloaf to rest for 10 minutes prior to cutting.
- Brush on the remaining glaze when the meatloaf comes out of the oven. Cut the meatloaf into 1-inch slices and serve.
