The husband tends to change up his dinners picks for birthday dinners. It’s usually Thai Peanut Chicken with Broccoli or Thai Sausage Curry. This year, this Reese’s Ice Cream Sandwich Cake will be proceeded by Chicken Cordon Bleu Alfredo Lasagna.

Your guests would never imagine that you didn’t spend an entire day making this ice cream sandwich cake. This is unbelievably easy to make because this is a no-bake, 6-ingredient dessert. How long can I store the ice cream sandwich cake in the freezer for?
This cake doesn’t even make it a day or two in my household typically. However, this cake can definitely be kept in the freezer for up to 7 days. Make sure to keep the cake tightly wrapped while freezing to preserve the freshness as long as possible.
The Tupperware container for the ice cream sandwich cake is quite large and will definitely take up some hefty real estate in your freezer. Don’t worry though because this cake will be devoured before you know it.
How long does the ice cream sandwich cake take to set in the freezer?
This cake is best served once it has had a chance to freeze overnight. You soften the vanilla ice cream prior to making the cake so leaving it overnight really gives it a chance to set back up. I know the excitement of revealing this gorgeous dessert and the anticipation of taking that first bite. However, learn from my mistakes and leave it be in the freezer. I’ve sliced this cake within a few hours of assembling and it just doesn’t hold together quite right.

Yes, you may use the mini version of the ice cream sandwiches. But ask yourself this: Why would you want to make a smaller version of this absolutely amazing treat? 😉

Follow the recipe provided with the following adjustments.
-Swap vanilla bean ice cream for Oreo ice cream
-Only use the Hershey’s syrup
-Top with Oreo Cool Whip Mix-ins and cover with (12) chopped up Oreo’s
Funfetti Ice Cream Sandwich Cake Substitutions:
Follow the recipe provided with the following adjustments.
-Swap the classic ice cream sandwiches for double vanilla ice cream sandwiches (vanilla ice cream between vanilla wafers)
-Funfetti ice cream instead of vanilla bean ice cream (Friendly’s Party Cake is perfect for this)
-In place of Hershey’s and Reese’s syrups, use strawberry syrup
-Top the cool whip with rainbow sprinkles

How To Make Unforgettable Reese’s Ice Cream Sandwich Cake
Equipment
- 2.5 Gallon Tupperware
Ingredients
- 10 Ice cream sandwiches (regular size)
- 3 Cups Vanilla bean ice cream
- 7 Ounces Magic shell chocolate fudge
- 7 Ounces Reese's peanut butter topping
- 8 Ounces Cool whip
- 8 Reese's peanut butter cups
Instructions
- Soften the vanilla bean ice cream for 20 minutes. In the meantime, chop the Reese's peanut butter cups into small chunks to top the ice cream cake with at the end. Line a 2.5 gallon Tupperware container with aluminum foil. Use plenty so that you will be able to wrap the foil around the cake at the end.
- Lay 4 ice cream sandwiches down in 2 rows.
- Add half of the softened vanilla bean ice cream and spread to cover the surface of the ice cream sandwiches.
- Add magic shell chocolate fudge and Reese's peanut butter topping.
- Repeat steps 2-4 for the second layer.
- Separate the cookie/wafer parts of the remaining two ice cream sandwiches length-wise.
- Lay ice cream sandwich halves over the top of the final layer.
- Spread the entire container of cool whip over the ice cream sandwich cake. Cover the top and the sides of the cake completely.
- Cover the cool whip with magic shell chocolate fudge, Reese's peanut butter topping and the chopped up Reese's peanut butter cups.
- Tightly wrap the entire ice cream sandwich cake with the foil. Cover the 2.5 gallon Tupperware container. Allow the cake to freeze overnight before serving.
- When ready to serve, remove the cake from the freezer for about 5 minutes in advance to soften slightly. Slice the ice cream sandwich cake. Enjoy!
