This is the most creamy, dreamy, velvety and savory creamed corn side dish with bacon. The secret to this special slow cooker side dish is a Southern cooking favorite… bacon grease. This is simple enough for any weeknight meal and fancy enough for any holiday spread.



This side dish was birthed this past Easter. For any holiday dinner that I am hosting, I love to experiment and try out at least one new side dish each year. I have a lot of fun brainstorming and researching until I come up with something new and exciting to test out. It’s always a good idea to do a practice run prior to the big show.

The ingredient I use for this dish that makes it so very extra amazing and really sends it over the top is bacon grease. This is a very traditional ingredient and so many things are made with it in the South. My Mom grew up in Florida so she had always kept a jar of reserved bacon grease for cooking whenever needed. Bacon grease is delicious when added to oil that you’re frying chicken in. I love making a good skillet potato dish with bacon grease and chunks or salty bacon.

How long does this slow cooker creamed corn cook for?

This recipe cooks for 4 hours on high or 8 hours on low. This dish is also delicious when reheated in a microwave with leftovers.

Is it okay to substitute the cans of whole kernel corn for cans of cream of corn?

No. The cream of corn will not work for this recipe. Though fresh corn or frozen corn would be good options texture-wise, it is best to just stick with the cans of whole kernel corn. This recipe requires the liquid from 2 of the cans.

Can this dish be prepared ahead of time?

I don’t think it would be a bad idea to add all of the ingredients to the slow cooker pot the night prior to cooking. If preparing this way, I would cover and refrigerate overnight and just pop it onto the slow cooker the next morning and go about your day.

Are there any delicious add-ins for this recipe?

While I find this dish to be creamy and bacony heaven as is, there is always room for creativity. Some excellent add-in options that you could try include:
-Jalapeño
-Cheddar cheese
-Monterey jack cheese
-Colby jack cheese
-Sausage


Instructions

Preheat oven to 350°. Lay bacon in a single layer on a pan sprayed baking sheet. Bake for 20 minutes or until crispy. Reserve 3 tablespoons of the bacon grease from the baking sheet.

Pan spray crockpot and add the remaining ingredients. When adding the cans of whole kernel corn, drain 2 of the cans and add the remaining cans including the liquid. I slice the stick of butter and the cream cheese into about 8 slices each when adding to the crockpot.

Top with the crumbled cooked bacon. Cover and cook on high for 4 hours.

  • 12 Ounces Bacon
  • 61 Ounce Cans of whole kernel corn
  • 8 Ounces Cream cheese
  • 1 Stick Butter
  • 1 Cup Half and half cream
  • 3 Tablespoons Bacon grease
  • 2 Tablespoons Flour or corn starch
  • 1 Teaspoon Salt
  • 1 Teaspoon Fresh cracked black pepper
  • 1 Teaspoon Garlic powder
  • 1 Teaspoon Dried parsley
  • 1 Teaspoon Dried oregano
  • ½ Teaspoon Smoked paprika

Instructions
