- 2 Large sweet potatoes
- 2 Pounds boneless skinless chicken breast
- 5 Cloves garlic
- 3 Tablespoons fish sauce
- 2 Tablespoons green onion (white part)
- 3 Teaspoons curry powder
- 1½ Teaspoons salt
- 1 Teaspoon black pepper
- 1 Teaspoon garlic powder
- 1 Teaspoon dried parsley
- 1 Teaspoon turmeric powder
- 32 Ounces chicken bone broth
Peel sweet potatoes and cut into 2-inch chunks. Chop garlic and the white part of the green onion. Pan spray the slow cooker pot and add all of the ingredients in the order listed. Cover and cook on high for 6 hours.
Remove the lid and stir for 3 minutes to break apart the sweet potatoes and the chicken prior to serving. Garnish with cilantro and enjoy!
