Easy Weeknight Roasted Sausage, Pepper and Onion Sheet Pan Supper

A very quick and easy dinner for any busy weeknight. This recipe is very fast to prepare and it offers all of the classic goodness you would expect from a good roasted sausage, pepper and onion dish. What makes this dish extra special? It has roasted russet and sweet potatoes as well.

Ingredients
  

  • 2.75 Pounds sweet Italian sausage links
  • 4 Russet potatoes
  • 2 Large sweet potatoes or yams
  • 2 Green peppers
  • ½ Large yellow onion
  • ¾ Cups vegetable oil
  • 3 Tablespoons minced garlic
  • Teaspoons adobo seasoning
  • Teaspoons salt
  • 1 Teaspoon black pepper
  • 1 Teaspoon garlic powder

Instructions
 

  • Preheat oven to 425°F. Add the sweet Italian sausage links to a pan sprayed baking pan. Bake for 25 minutes.
  • Chop the sweet potatoes/yams, russet potatoes, green peppers and onion into 2-inch chunks or slices.
  • Pan spray a large baking dish, add the vegetable oil and minced garlic to the bottom. Cover with all of the chopped vegetables. Season with adobo seasoning, salt, black pepper and garlic powder. Stir to combine everything well. Reduce the heat of the oven to 400°F. Bake for 1 hour and 20 minutes.
  • Once the sweet Italian sausage have baked for their 25 minutes, remove from the oven. It is important to note that the sausage will only be cooked about halfway. Slice the sausage into two inch chunks. Add to the roasting pan of vegetables in the oven and stir to combine. Return to the oven for the remainder of the baking time. Re-stir everything in the roasting pan about every 30 minutes to ensure that everything is roasting evenly.
